Every time we eat proteins our stomach is producing pepsin- a digestive enzyme. Pepsin works only under acidic conditions, which have to be maintained for several hours so that they can properly digest food.


If we consume potatoes and piece of bread or other carbohydrate food therefore in our mouth during chewing another enzyme is released. It is amylase and it works only in basic conditions (pH higher than 7). For carbohydrate and starch to be fully digested we need basic conditions in our intestines.


Now we can easily imagine what happens when we eat potatoes and bread together.
Amylase from our mouth neutralizes the acidic conditions of our stomach, which leaves us with poor quality stomach juice. Therefore the digestion of proteins cannot reach its maximum. Also digestion of carbohydrates is slowed down.


The presence of bacteria in our intestines cause fermentation of proteins and sugars.

   
This might be a primary cause of many stomach problems such as:


  • heartburn

  • winds

  • colic

  • constipation

  • haemorrhoids

  • inflammation of the colon which might lead to cancer

  • contractions of stomach

  • Many of the allergies is caused by inappropriate mixing of different foods. Blood passing through intestines picks up toxic substances of digestion and fermentation, which cause: rash, nausea, headaches and other symptoms of allergies.


    Therefore improperly chosen foods slow down stomach action and digestive processes, giving bacteria its way. They get nutrition and we are left with “left-overs”.

    We should avoid the following combinations of foods:


    1. PROTEINS AND STARCH


      This is the worst combination of all possible. Unfortunately it is present in most of our dinners (potatoes and meat).
      Protein-rich meals (poultry, meat, cheese, fish, eggs, milk, avocado, soya products, peas, beans, whole-grain, nuts) and starch-rich meals (potatoes, rice, pasta, cakes) should ALWAYS be eaten separately.
      Therefore you should eat for breakfast either egg or toast, for lunch either bread or ham and for dinner either meat or potatoes.


    2. PROTEINS AND PROTEINS


      Different proteins require different ways of digestion. Therefore if you eat protein meal you should for example firstly eat meat, then eggs and at last milk. You cannot mix those together.
      To provide your body with all necessary amino acids you should eat variety of different proteins.


    3. STARCH AND ACIDIC PRODUCTS


      The release of amylase is stopped by eating together starch and acidic products. If we eat together with starch such acidic fruits like oranges, or grapefruits then amylase, which takes part in initial steps of digestion of starch is not released. Therefore starch reaches the stomach without basic enzymes what enable bacterial fermentation.
      If you eat toast or cereals do not drink orange juice. Do not add also vinegar or protein to pasta.


    4. PROTEINS AND ACIDIC PRODUCTS


      It might seem reasonable that acidic foods might help the digestion of proteins which require low pH conditions. However it is not true. The presence of acid in stomach switches off the release of gastrin, what in turn slows down the release of pepsin(digestive enzyme).
      Never mix proteins and acidic foods in one meal.


    5.  PROTEINS AND FATS


      The presence of fats in intestines slows down the release of stomach juice for about three hours. This inhibits digestion of proteins giving bacteria its way.
      Proteins and fats should always be eaten separately. Consumption of large amounts of fresh vegetables aids passage of food through our digestive system.


    6. PROTEINS AND SUGARS


      All sugars inhibit the release of stomach juice because they quickly pass through it, to be then digested in intestines. When you mix them with proteins (e.g sweeties after meat) then the problem is not just sugar which inhibit digestion of protein, but also presence of it in the stomach. Here bacteria can cause its fermentation which leads to production of harmful toxins.


    7. STARCH AND SUGARS


      Amylase is not released in the mouth when we consume sugars and starch together. Therefore starch does not reach stomach with its vital digestive enzyme and sugars are trapped in it, what might lead to fermentation. Products of fermentation have low pH which also inhibits digestion of starch.


      You can combine starch (bread) and fat (butter), but never add to it jam or honey.

    To sum up. Improper mixing of different kinds of food leads to fermentation of it by bacteria in our digestive system. Products of fermentation are toxic and they should be expelled from our body along with urine. However if we eat constantly inappropriate foods then our body can simply not cope with such great amount of toxins.
